Hello everyone!
Last Sunday I had some (not vegan) friends for lunch and I had fun in making different things to let them try a rich vegan lunch!
That’s what I put on the table:
Hummus with naan (Indian bread, it’s not gluten free)
Eggplant sauce with naan – I called this sauce Eggplant tahini
Lentils no-meat-balls with mayo, ketchup and mustard
Basmati rice with coconut, tofu and broccoli curry
Basmati rice with okra and tomato sauce
Basmati rice with vegetables in tahini sauce
Roasted marinated pumpkin
Here, for you, my recipes!
Eggplant tahini
375 gr steamed eggplant (1 big eggplant), diced
100 gr dried cherry tomatoes in olive oil
30 gr tahini sauce
Just blend all the ingredients and serve!
Lentils no-meat-balls
245 gr green lentils
1 piece of kombu alga (3 cm)
1 red onion
Extra virgin olive oil
2 garlic cloves
Umeboshi vinegar to taste
Dried ground herbs (rosemary, sage and thyme)
50 gr toasted pumpkin seeds
50 gr sunflower seeds
Boil the lentils in cold unsalted water (ratio 4:1) with the alga.
Stir fry the chopped onion and garlic in a pan with some oil, then add the lentils and sauté, pouring some umeboshi vinegar to season and sprinkle some herbs.
Blend the lentils with the seeds using your blender.
Let the mixture cool down before making balls with wet hands, pour a drizzle of oil and bake to 180 Celsius degrees for about 15 minutes.
Serve them with (vegan) mayonnaise, ketchup and/or mustard!
Basmati rice with coconut, tofu and broccoli curry
It’s a recipe I posted a lot of time ago, the only difference is I used some grilled tofu instead of grilled tempeh.
Here’s the recipe:
Basmati rice with okra and tomato sauce
About 14 okras
1/2 red onion
400 gr tomato pulp
Extra Virgin olive oil
Dried ground herbs
Gomasio to taste
Heat some oil in a pan, then add the chopped onion and stir fry.
Add the clean and sliced okra and sauté.
Pour the tomato pulp and cook on a low flame to reduce the sauce.
Sprinkle with some herbs and gomasio to season.
(I took the picture before adding the tomato pulp).
Basmati rice with vegetables in tahini sauce
I used one old recipe of mine but I put just fennel and carrots and didn’t put tandoori masala in the sauce: only soy cream, tahini sauce and tamari sauce.

Domenica scorsa ho avuto alcuni amici (non vegan) per pranzo e mi sono divertita a fare tanti piattini per fargli provare un buon pranzetto vegan!
Ecco cosa ho messo in tavola:
Hummus con naan (pane indiano, non è senza glutine)
Salsa di melanzana con Naan – ho chiamato la salsa tahina di melanzana
Polpette di lenticchie con mayo, ketchup e senape
Riso basmati con curry di cocco, broccoli e tofu
Riso basmati con okra in salsa di pomodoro agli aromi
Riso basmati con verdure in crema di tahina
Zucca marinata al forno
Ecco, per voi, le mie ricette!
Tahina di melanzane
375 gr melanzana cotta a vapore (1 melanzana grande), a dadini (pesata dopo la cottura, mi ero dimenticata scusate!)
100 gr pomodorini secchi in olio di oliva
30 gr tahina
Frullate gli ingredienti e servite!
Polpette di lenticchie
245 gr lenticchie verdi
1 pezzo di alga kombu (3 cm)
1 cipolla rossa
Olio evo
2 spicchi d’aglio
Acidulato di umeboshi qb
Aromi (rosmarino, salvia e timo)
50 gr semi di zucca tostati
50 gr semi di girasole
Lessate le lenticchie in acqua fredda non salata (rapporto 4:1) con l’alga.
Soffriggete aglio e cipolla tritati in padella con un filo d’olio, poi aggiungete le lenticchie e saltate, versando un po’ di acidulato e spolverate con gli aromi.
Frullate le lenticchie coi semi.
Lasciate raffreddare il composto prima di fare le polpette con mani umide, versate un filo d’olio ed infornate a 180 gradi per circa 15 minuti.
Servitele con mayo (vegan), ketchup e/o senape.
Riso basmati con curry di cocco, tofu e broccoli
È una ricetta che ho pubblicato parecchio tempo fa, l’unica differenza è che ho usato del tofu grigliata invece del tempeh.
Ecco la ricetta:
Riso basmati con okra in salsa di pomodoro agli aromi
Circa 14 okra
1/2 cipolla rossa
400 gr polpa di pomodoro
Olio evo
Aromi (origano, rosmarino, salvia)
Gomasio qb
Scaldate un po’ d’olio in padella, poi aggiungete la cipolla tritata e soffriggete.
Aggiungete l’okra pulita e tagliata e saltate.
Versate la polpa di pomodoro e cuocete su fiamma bassa per ridurre la salsa.
Spolverate con aromi e gomasio a piacere.
(Ho fatto la foto prima di aggiungere la salsa di pomodoro).
Riso basmati con verdure in crema di tahina
Ho usato una mia vecchia ricetta ma ho messo solo finocchio e carote e non ho aggiunto il tandoori masala nella crema: solo panna di soia, tahina e salsa tamari.
