Hello everyone!
The name of this cake is a mix between chocolate and coconut, and I can say it’s really delicious!
In this recipe I used some leftover juice pulp: fruit and carrot.
It’s so soft that it melts in your mouth, even if it’s oil free!!…just try and see!
PS: I used a 28 cm diameter cake pan 😉
Ingredients:
50 gr tapioca starch (also known as tapioca flour)
100 gr rice flour
50 gr potato starch
370 gr leftover fruit and carrot pulp
200 gr brown sugar
350 ml millet milk (or other vegetable and gluten free milk)
100 gr desiccated coconut (+ extra coconut to dust the top of the cake)
1 bag of baking powder (17 gr) – I used cream of tartar
1 pinch of sea salt
1/2 tsp baking soda (you won’t need it if you use cream of tartar because it has baking soda in its ingredients)
75 gr unsweetened cocoa powder
30 gr Goji berries
Vegan and gluten free hazelnut and cocoa cream to garnish the top of the cake
Method:
Sift flour, starches and cocoa powder in a mixing bowl, and blend using a wooden spoon. Add sugar, coconut, baking powder, salt and baking soda, and blend again.
Add now the leftover juice pulp and the Goji berries, stirring.
Slowly pour the milk, keeping on blending until the mixture gets the right thickness.
Pour the dough in your cake pan (I lined mine with baking paper, or you can oil and dust it with rice flour), spread it out evenlyand bake in pre-heated oven to 170° for about 45′.
Let the cake cool down for about 10′ before spreading the hazelnut and cocoa cream on the top, using a palette knife.
Then dust the top with coconut.

Il nome di questa torta è un mix tra cocco e cioccolato, e posso dire che è davvero deliziosa!
In questa ricetta ho utilizzato delle fibre scartate dall’estrattore: frutta e carota.
E’ così morbida che si scioglie in bocca, anche se è senza olio!!…provate e vedrete!
PS: io ho usato una tortiera da 28 cm di diametro 😉

Ingredienti:
50 gr farina di tapioca (nota anche come amido di tapioca)
100 gr farina di riso
50 gr fecola di patate
370 gr mix di fibre di frutta e carota
200 gr zucchero di canna
350 ml latte di miglio (o altro latte privo di glutine)
100 gr cocco rapé (+ extra per spolverata in superficie)
1 bustina lievito (17 gr) – io ho usato il cremor tartaro
1 pizzico sale
1/2 cucchiaino bicarbonato (non vi servirà se usate il cremor tartaro perchè lo contiene già tra i suoi ingredienti)
75 gr cacao amaro
30 gr bacche di Goji
Crema di nocciole e cacao vegan e gluten free per copertura
Procedimento:
Setacciare in una terrina farina, amidi e cacao, e mescoliamo con cucchiaio di legno. Aggiungere lo zucchero, il cocco, il lievito, il sale ed il bicarbonato, e continuiamo a mescolare.
Incorporiamo ora il mix di fibre e le bacche di Goji, mescolando.
Aggiungiamo ora gradualmente il latte di miglio continuando a mescolare finchè il composto non ottiene la giusta consistenza.
Disponiamo l’impasto nello stampo foderato con carta da forno, livelliamo ed inforniamo a 170° per circa 40′.
Una volta sfornata lasciamo raffreddare una decina di minuti prima di spalmare la crema di nocciole e cacao utilizzando una spatola.
Infine spolveriamo con il cocco.
