Today I wanna share with you this recipe I’m really satisfied with!
I called this veggie balls “drops” because they’re so soft and creamy inside! The “creamy” ingredient is a cream I made using tofu and walnuts (I love the radicchio and walnuts match!). 😋
I decided to use red sweet potatoes instead of “classic” potatoes because I think that their sweetness gets along with the slight bitterness of radicchio rosso.

Ingredients (for about 45 “drops”):
635 gr radicchio rosso (2 heads)
1 leek
645 gr red sweet potato
1 big garlic clove
Black pepper
Ground dried oregano, sage and rosemary
Extra virgin olive oil
Umeboshi vinegar
Corn breading
For the tofu and walnut cream:
10/12 walnuts (about 45 gr shelled walnuts)
125 gr tofu
3 tbsp lukewarm water
1 tbsp extra virgin olive oil
Method:
Peel and dice the sweet potatoes, and steam them. Put them in a bowl and mash using a fork.
Wash, clean and shred the radicchio.
Heat some oil in a pan, then add the chopped leek and garlic and stir-fry.
Add the radicchio into the pan, put the lid on, lower the flame and sweat it.
Make the cream just by blending all the ingredients into your food processor.
Add the mashed potatoes into the pan, mix using a wooden spoon. Then add also the tofu and walnut cream and mix again.
Sprinkle some black pepper and herbs, pour a drizzle of oil and umeboshi vinegar (to season), and blend.
Let the mixture cool down before shaping the balls with your hands.
Roll them in corn breading, then place the “drops” on the baking tray (remember to line it with waxed paper) and pour a drizzle of oil.
Cook in preheated oven to 180* for about 25′ + 2′ of grill function.
Let them cool down before serving.

Ho chiamato queste vegan polpette “gocce” perché sono così morbide e cremose dentro! L’ingrediente “cremoso” è una crema che ho fatto usando tofu e noci (amo l’abbinamento radicchio e noci!). 😋
Ho deciso di usare la batata rossa invece della patata “classica” perché penso che la sua dolcezza giochi bene con l’amarognolo del radicchio rosso.

Ingredienti (per circa 45 “gocce”):
635 gr radicchio rosso (2 cespi)
1 porro
645 gr batata rossa
1 spicchio d’aglio grande
Pepe nero
Origano, salvia e rosmarino secchi tritati
Olio evo
Acidulato di umeboshi
Panatura di mais
Per la crema di tofu e noci:
10/12 noci (circa 45 gr noci sgusciate)
125 gr tofu
3 cucchiai acqua tiepida
1 cucchiaio olio evo
Procedimento:
Pelate e fate a cubetti la batata, e cuocetela a vapore. Trasferite in una terrina e schiacciate con una forchetta.
Lavate, pulite e fate a striscioline il radicchio.
Scaldate un po’ d’olio in padella, poi aggiungete porro ed aglio tritati e soffriggete.
Aggiungete il radicchio in padella, coprite, abbassate la fiamma e fate appassire.
Preparate la crema semplicemente frullando tutti gli ingredienti nel mixer.
Aggiungete la batata schiacciata in padella, amalgamate con un cucchiaio di legno. Poi aggiungete anche la crema di noci e tofu ed amalgamate ancora.
Spolverate con pepe nero ed aromi, versate un filo d’olio e di acidulato (per salare) e mescolate.
Lasciate raffreddare il composto prima di formare le polpette con le mani.
Passatele nella panatura di mais, poi disponete le “gocce” sulla teglia da forno (ricordate di rivestirla con carta forno) e versate un filo d’olio.
Cuocete in forno preriscaldato a 180* per circa 25′ + 2′ di funzione grill.
Lasciate intiepidire prima di servire.
