This is an other experiment I made using my dehydrator, I called these cookies “raw-ies” because they’re raw cookies lol 🙂
You can store them in the fridge for a few days, but they won’t last so long!!!
I used some leftover juice pulp, but if you haven’t it you can use some fresh fruit pulp.
Ingredients:
120 gr leftover apple, orange, lemon, kiwi fruit, ginger and date pulp
20 gr flax seeds
20 gr sesame seeds + extra amount for topping
80 gr pitted dates (I use mazafati quality, they’re raw and they don’t need soaking)
15 gr Brazil nuts (also know as Amazonian nuts)
30 gr almonds
2 tsp carob powder
10 gr desiccated coconut (about 2 full tbsp)
Method:
Soak almonds and Brazil nuts for at least 2 hours (as usual I forgot to do that, so don’t worry if you don’t have enough time you can make these cookies anyway!).
Grind flax seeds and sesame seeds (I use a coffee grinder), and roughly grind Brazil nuts too (just to make the job easier for your food processor).
Now put all the ingredients in your food processor and blend until you get a sticky mixture.
Wet your hands and shape your raw-ies as you like: I decided to go with round cookies (just roll the paste in between your hands into little balls, then press them to shape) and stick-shaped cookies (roll the paste in between your hands into little “sausages”, then press them to shape).
Sprinkle sesame seeds on them.
Dehydrate for about 5/6 hours setting the raw program (max temperature = 42°).
I left my raw-ies in the dehydrator for 15 hours only because I had some fruit inside too, and it takes time, but I tried the cookies after 5 hours and I think that’s enough time.

Questo è un altro esperimento che ho fatto usando il mio essiccatore, ho chiamato questi biscottini “Bis-crudini” perchè sono biscotti crudisti ahahah 🙂
Potete conservarli in frigorifero per qualche giorno, ma non dureranno a lungo!!!
Ho utilizzato della polpa di frutta scartata dall’estrattore, ma se non ne avete potete usare polpa di frutta fresca.
Ingredienti:
120 gr polpa di mela, arancia, limone, kiwi, zenzero e datteri scartata dall’estrattore
20 gr semi di lino
20 gr semi di sesamo + quantità extra per la copertura
80 gr datteri snocciolati (io uso la qualità mazafati, sono crudi e non necessitano di ammollo)
15 gr noci del Brasile (anche note come noci dell’Amazzonia
30 gr mandorle
2 cucchiaini polvere di carruba
10 gr cocco rapé (circa 2 cucchiai colmi)
Procedimento:
Ammollate le mandorle e le noci dell’Amazzonia per almeno 2 ore (come al solito io me ne sono dimenticata, quindi non vi preoccupate se non avete tempo a sufficienza potete comunque fare questi biscotti!).
Macinate i semi di lino e di sesamo (io uso un macinacaffè), e tritate grossolanamente anche le noci (giusto per rendere più facile il lavoro al vostro mixer).
Ora mettete tutti gli ingredienti nel mixer e frullate fino ad ottenere un composto appiccicoso.
Inumiditevi le mani e date la forma che preferite ai vostri bis-crudini: io ho optato per biscottini rotondi (semplicemente fate con le mani delle palline, poi schiacciatele per dare la forma) e biscotti a bastoncino (fate con le mani dei “salsicciotti”, poi schiacciateli per dare la forma).
Spolverate con semi di sesamo.
Essiccate per circa 5/6 ore impostando il programma crudista (max temperatura = 42°).
Io ho lasciato i miei bis-crudi nell’essiccatore per 15 ore solo perchè avevo dentro anche della frutta, e richiede tempo, ma ho provato i biscottini dopo 5 ore e ritengo sia un tempo sufficiente.
