These brownies are simply delicious, so I’m happy to share with you my recipe! 😉
It’s a gluten, sugar (except for the garnish on the top) and yeast free recipe.
I hope you’ll try and like it!
Ingredients (for 15 brownies, I used a 31×24 mold):
240 gr rice flour
45 gr tapioca starch
80 gr cocoa powder
90 gr shelled hazelnuts
1,5 tsp baking soda
1 pinch of sea salt
140 gr peanut butter (I use a 100% peanuts cream) + extra amount for the topping
120 ml maple syrup
200 ml hazelnut milk (or other gluten free vegetable milk)
80 ml sunflower oil
3 tsp lemon juice
Cocoa and hazelnut spread cream for the garnish
Method:
Sift the flour, starch, cocoa and baking soda into a bowl, the add the sea salt and the hazelnuts and blend with a spoon.
Add the peanut butter and slowly pour the syrup, oil and milk. Blend again.
Preheat the oven to 180° and line your mold with parchment paper.
Just at the and pour the lemon juice into the mixture, quickly blend and move the mixture into the mold, then spread it out evenly.
Bake to 180° for about 25′.
Slightly heat the hazelnut and cocoa spread cream and the peanut butter in your microwave (just 1 minute), then use them to garnish the top of the brownies (do it when the “cake” is still warm, before cutting it in squares): I spread the peanut butter all over the top, then I made some “spots” of hazelnut and cocoa cream on it and used a toothpick to draw some decorations.
Let it cool down before cutting it in squares.

Questi brownies sono semplicemente deliziosi, quindi sono felice di condividere con voi la mia ricetta! 😉
E’ una ricetta senza glutine, zucchero (eccetto per la decorazione) né lievito.

Ingredienti (per 15 brownies, ho usato una pirofila 31×24):
240 gr farina di riso
45 gr amido di tapioca
80 gr cacao in polvere
90 gr nocciole sgusciate
1,5 cucchiaini bicarbonato
1 pizzico di sale
140 gr burro di arachidi (io uso una crema 100% arachidi) + quantità extra per la copertura
120 ml sciroppo d’acero
200 ml latte di nocciola (o altro latte vegetale senza glutine)
80 ml olio di semi di girasole
3 cucchiaini succo di limone
Crema di cacao e nocciole per le decorazioni
Procedimento:
Setacciate la farina, l’amido, il cacao ed il bicarbonato in una terrina, poi aggiungete il sale e le nocciole e mescolate con un cucchiaio.
Aggiungete la crema di arachidi e versate gradualmente sciroppo, olio e latte. Amalgamate bene.
Preriscaldate il forno a 180° e rivestite lo stampo con carta forno.
Solo alla fine aggiungete il succo di limone, mescolate velocemente e trasferite il composto nello stampo, poi livellate.
Cuocete a 180° per circa 25′.
Scaldate leggermente la crema di cacao e nocciole ed il burro di arachidi nel microonde (giusto 1 minuto), poi usateli per guarnire la superficie dei brownies (fatelo quando la “torta” è ancora calda, prima di tagliarla a quadratini): io ho spalmato tutta la superficie con burro di arachidi, poi ci ho fatto sopra delle “macchie” di crema di cacao e nocciola ed ho usato uno stuzzicadenti per disegnare delle decorazioni.
Lasciate raffreddare bene prima di tagliare i quadratini.
