I told you I grew fond of raw pesto so…this is another pesto I tried and I loved!
I’m happy to share with you my recipe.
You can freeze it to use it when you like, or keep it in the fridge and use it in 3/4 days.
You can spread it on piadina, or make some raw veggie canapes, or use it to dress raw veggie spaghetti! It’s delicious anyway!
Ingredients:
5 artichokes
40 gr pine nuts (or almonds if you prefer)
1 garlic clove
10 tbsp extra virgin olive oil
1 tbsp umeboshi vinegar (I use it instead of salt, you can use sea salt of course if you prefer)
Fresh parsley
Method:
Clean and slice the artichokes (I cut them in 8 pieces), then keep them in water and lemon juice until you’re ready to make the pesto (so they don’t darken and they lose the bitter-tasting).
Now put them in your food processor little by little, together with pine nuts and garlic, and blend.
Pour oil (gradually, so you can stop when you get the thickness you like) and umeboshi vinegar, and keep blending.
Just at the end put some fresh parsley and quickly blend again.

Vi ho detto che sono diventata appassionata di pesto crudista quindi…questo Γ¨ un altro pesto che ho provato ed adorato!
Sono felice di condividere con voi la mia ricetta.
Potete congelarlo per usarlo quando volete, o tenerlo in frigo e consumarlo in 3/4 giorni.
Potete spalmarlo sulle piadine, o fare delle tartine crudiste di verdure, o usarlo per condire spaghetti crudisti di verdure! E’ comunque delizioso!
Ingredienti:
5 carciofi
40 gr pinoli (o mandorle se preferite)
1 spicchio d’aglio
10 cucchiai di olio evo
1 cucchiaio di acidulato di umeboshi (lo uso al posto del sale, potete ovviamente usare il sale se preferite)
Prezzemolo fresco
Procedimento:
Pulite e affettate i carciofi (io li taglio in 8 pezzi), poi teneteli in acqua e succo di limone finchΓ¨ non siete pronti a fare il pesto (cosΓ¬ non scuriscono e perdono l’amaro).
Ora metteteli nel mixer poco a poco, insieme ai pinoli e l’aglio, e frullate.
Versate l’olio (gradualmente, cosΓ¬ potete fermarvi quando raggiungete la consistenza che preferite) e l’acidulato di umeboshi, e continuate a frullare.
Solo alla fine unite del prezzemolo fresco e frullate velocemente di nuovo.
