The hot soups’ season has started! When the warm sunny days are over…what I want is just a hot soup to warm myself and my mood! 😉
If you prefer you can make it creamy using your hand blender, like that (just add the beans after blending):
Ingredients (4 servings):
500 gr spinach
500 gr pumpkin
415 gr potato
200 gr leek
1 garlic clove
500 ml vegetable broth
120 gr adzuki beans (dry weight)
1 bay leaf
1 piece (3 cm) of kombu alga
2 tsp turmeric powder
Ground dried oregano, sage and rosemary
Extra virgin olive oil
Method:
Soak the beans for 12 hours with a piece of kombu alga (3 cm), then boil them in unsalted cold water (ratio 6:1). Put a halved bay leaf and the piece of kombu alga in the pot during cooking. It takes about 90′.
Clean, wash and shred the spinach, then steam it.
Clean and dice the pumpkin, peel and dice the potatoes too.
Heat some oil in a pot, then add the chopped leek and garlic and stir-fry.
Add pumpkin and potatoes into the pot and quickly sauté them, then pour the boiling broth, cover, lower the flame and cook for about 30′.
Now add the steamed spinach and the beans, sprinkle some herbs and turmeric and cook 5′ more.

La stagione delle zuppe calde è iniziata! Quando le calde giornate di sole finiscono, quello che voglio è solo una bella zuppa calda per riscaldare me stessa ed il mio umore! 😉
Se preferite potete farne una vellutata usando il frullatore ad immersione, così (aggiungete i fagioli dopo aver frullato):
Ingredienti (4 porzioni):
500 gr spinaci
500 gr zucca
415 gr patate
200 gr porri
1 spicchio d’aglio
500 ml brodo vegetale
120 gr fagioli azuki (peso secco)
1 foglia di alloro
1 pezzo (3 cm) di alga kombu
2 cucchiaini curcuma in polvere
Mix secco macinato di origano, salvia e rosmarino
Olio evo
Procedimento:
Ammollate i fagioli per 12 ore con un pezzo di alga kombu (3 cm), poi bolliteli in acqua fredda non salata (rapporto 1:6). Mettete una foglia di alloro ed il pezzo di alga kombu nella pentola durante la cottura. Impiega circa 90′.
Pulite, lavate e tagliate gli spinaci, poi cuoceteli a vapore.
Pulite e fate a cubetti la zucca, pelate e tagliate a dadini anche le patate.
Scaldate un po’ d’olio in una pentola, poi aggiungete i porri e l’aglio tritati e soffriggete.
Aggiungete zucca e patate nella pentola e saltate velocemente, poi versate il brodo bollente, coprite, abbassate la fiamma e cuocete per circa 30′.
Ora aggiungete gli spinaci cotti a vapore ed i fagioli, spolverate con le erbe e la curcuma e cuocete altri 5′.
