Here I am to share with you a delicious rice pie with asparagus, asparagus and tahini sauce and Indian peas… 😋😋😋
Ingredients (for a 28 cm diameter mold):
700 gr asparagus
250 gr brown rice
100 gr red onion
1/2 habanero pepper (I remove all the seeds)
90 gr Indian peas (dry weight)
1 bay leaf
About 3 cm of kombu alga
Extra virgin olive oil
Umeboshi vinegar
Ground dried oregano, rosemary, thyme and sage
Corn breading
For the asparagus and tahini sauce:
About 4 cm of each asparagus
1,5 tbsp tahini
1,5 tbsp lemon juice
1,5 tbsp umeboshi vinegar
3 tsp extra virgin olive oil
Method:
Soak the Indian peas for about 20/24 hours with the kombu alga.
Cook them in unsalted cold water with the kombu alga and a halved bay leaf. It will take about 90 minutes.
Rinse and cook the rice in unsalted cold water (ratio 2:1), it will absorb all the water and will be ready in about 45 minutes. Let it stand covered, out of the heat.
Wash, clean and steam the asparagus. Cut about 4 cm of each stem and put the pieces in your food processor with the other ingredients for the sauce. Blend.
Heat some oil in a pan, then add the chopped onion and pepper (I remove most of the seeds) and stir-fry.
Add rice, steamed asparagus and Indian peas into the pan. Pour a drizzle of oil and umeboshi vinegar, sprinkle some herbs and sauté.
Turn off the flame, pour the sauce into the pan and blend with a spoon.
Move the mixture into the mold (line it with parchment paper), sprinkle with some corn breading, pour a drizzle of oil and cook in preheated oven to 190 C degrees for about 30 minutes, then set the grill function for about 3 minutes.
Let it cool down before serving.

Ingredienti (per una tortiera da 28 cm di diametro):
700 gr asparagi
250 gr riso integrale
100 gr cipolla rossa
1/2 peperoncino habanero rosso
90 gr cicerchie (peso secco)
1 foglia di alloro
Circa 3 cm alga kombu
Olio evo
Acidulato di umeboshi
Trito secco di origano, rosmarino, timo e salvia
Panatura di mais
Per la crema di asparagi e tahina:
Circa 4 cm di ogni asparago
1,5 cucchiai tahina
1,5 cucchiai succo di limone
1,5 cucchiaini acidulato di umeboshi
3 cucchiaini olio evo
Procedimento:
Ammollate le cicerchie per circa 20/24 ore con l’alga kombu.
Cuocetele in acqua fredda non salata con l’alga kombu ed una foglia di alloro spezzata a metà. Impiegheranno circa 90′.
Sciacquate il riso e cuocetelo in acqua fredda non salata (rapporto 2:1), assorbirà tutta l’acqua e sarà pronto in circa 45′. Lasciatelo riposare coperto, fuori fiamma.
Lavate, pulite e cuocete a vapore gli asparagi. Tagliate circa 4 cm di ogni gambo e mettete i pezzi nel mixer con gli altri ingredienti per la crema. Frullate.
Scaldate un po’ d’olio in padella, poi aggiungete cipolla e peperoncino (io elimino quasi tutti i semi) tritati e soffriggete.
Aggiungete riso, asparagi e cicerchie in padella. Versate un filo d’olio e di acidulato, spolverate con gli aromi e saltate.
Spegnete la fiamma, versate la crema in padella ed amalgamate con un cucchiaio.
Trasferite il composto nella tortiera (rivestitela con carta forno), spolverate con panatura di mais, versate un filo d’olio e cuocete in forno preriscaldato a 190* per circa 30′, poi con funzione grill per circa 3′.
Lasciate raffreddare prima di servire.
