What do you think about dried figs, cocoa and coconut? If you like them you absolutely gotta try this cake!!
And what if I tell you that it’s not only gluten free vegan but also oil, sugar and yeast free??
I brought it at work a few days ago and my colleagues (they’re totally not-vegan!) devoured it!
It’s really good, wet and melting inside, it makes my breakfasts happier moments 🙂
I’m glad to share with you my recipe, hope you’ll like it!
Ingredients (for a 22 cm diameter cake mold):
130 gr rice flour
50 gr chickpea flour
30 gr cocoa powder
40 gr tapioca starch
50 gr grated dried coconut
2 tsp baking soda
300 gr dried figs
400 ml coconut milk
100 ml maple syrup
6 tsp lemon juice
Method:
Sift and blend all the powder ingredients in a bowl.
Cut each fig into 4 parts, then soak them in water for 10 minutes before adding them to the bowl.
Pour – stirring – milk and syrup.
Pre-heat the oven to 180 °C and, just when it’s ready, add the lemon juice to the mixture, quickly blend and pour it into your cake mold (I usually line it with parchment paper). Then put it into the oven.
The lemon juice will react with the baking soda: Â this reaction replaces the yeast.
Bake for about 35/40 minutes (try the cake with a toothpick).

E se vi dicessi che non è solo vegan e senza glutine ma anche senza olio, zucchero e lievito??
L’ho portata al lavoro qualche giorno fa ed i miei colleghi (assolutamente non vegan!) l’hanno divorata!
E’ davvero buona, umida e fondente dentro, rende le mie colazioni momenti più felici! 🙂
Mi fa piacere condividere con voi questa ricetta, spero vi piaccia!
Ingredienti (per uno stampo da 22 cm):
130 gr farina di riso
50 gr farina di ceci
30 gr cacao in polvere
40 gr amido di tapioca
50 gr cocco rapé
2 cucchiaini bicarbonato
300 gr fichi secchi
400 ml latte di cocco
100 ml sciroppo d’acero
6Â cucchiaini succo di limone
Method:
Setacciate e mescolate gli ingredienti secchi in una terrina.
Tagliate in 4 i fichi, poi ammollateli 10 minuti prima di aggiungerli nella terrina.
Versate – mescolando – latte e sciroppo.
Preriscaldate il forno a 180°C e, solo quando pronto, aggiungete il succo di limone al composto, mescolate velocemente e versatelo nello stampo (io lo rivesto con carta forno). Poi infornate.
Il succo di limone reagirà con il bicarbonato: questa reazione sostituisce il lievito.
Cuocete per circa 35/40 minuti (fate la prova stecchino).
