Hello everyone!
I’m having fun in creating raw desserts, and this is an amazing season for delicious fruit!
I got these wonderful organic strawberries and blueberries, so I decided to use them for this colorful raw cake, I hope you’ll like it!
Just take it out from the freezer about 30β² before serving.
If you want to have just one slice, and leave the rest into the freezer, you can put a knife into boiling water, then dry it and use it to slice the cake π
I suggest to use a springform pan to open it easily.

Ingredients (for a 12 cm diameter mold):
100 gr pitted dates (I use mazafati quality, theyβre fresh, not dried, so they donβt need soaking)
100 gr shelled and peeled almonds
180Β gr strawberries (125 gr for the second layer, 55 gr for the topping)
6 tbsp home-made almond milk (you can use any kind of vegetable and gluten-free milk)
35 gr blueberries
1 tbsp coconut flourΒ (finely ground coconut flour β itβs different from desiccated coconut)
Lemon juice
Method:
Freeze the diced strawberries (just 125 gr, not all the strawberries, keep the rest of them into the fridge) and the blueberries for at least 2 hours.
Soak the almonds for at least 2 hours.
Now let’s begin to create our cake!
For the first layer:
Put the dates and the almonds in your food processor and blend until you get a sticky mixture. Spread it out evenly in the cakeΒ pan (I lined mine with baking paper):
Now put it into the freezer.
For the second layer:
Put the diced and frozenΒ strawberries in your food processor, pour 5 tbsp of milk and blend until you get an “ice cream” texture. Spread it out evenly on the first layer of the cake:
Put the cake back into the freezer and let it stand until frozen.
For the third layer:
Put the frozenΒ blueberries in your food processor with 1 tbsp of milk and 1 tbsp of coconut flour and blend. Use the mixture to make the third layer:
Put the cake back into the freezer and leave it there until completely frozen.
For the topping:
Dice the rest (55 gr) of your strawberries and drizzle some lemon juice on them. Use them to garnish the top of your cake.

Mi sto divertendo a creare dolci raw (crudisti), e questa Γ¨ una stagione straordinariaΒ per frutta deliziosa!
Ho preso queste meravigliose fragole e mirtilli bio, così ho deciso di usarli per fare questa coloratissima torta raw, spero vi piaccia!
Tiratela fuori dal freezer circa 30′ prima di servirla.
Se ne volete solo una fetta, e lasciare il resto in freezer, potete mettere un coltello in acqua bollente, poi asciugarlo ed usarlo per affettare la torta π
Suggerisco di usare una tortiera a cerniera per aprirla agevolmente.

Ingredienti (per uno stampo da 12 cm di diametro):
100 gr datteri snocciolati (io uso la qualitΓ mazafati, sono freschi, non essiccati, quindi non richiedono ammollo)
100 gr mandorle sgusciate e pelate
180 gr fragole (125 gr per il secondo strato, 55 gr per la copertura)
6 cucchiai latte auto-prodotto di mandorle (potete usare qualsiasi tipo di latte vegetale e senza glutine)
35 gr mirtilli
1 cucchiaio farina di cocco (farina finemente macinata – diversa dal cocco rapΓ©)
Succo di limone
Procedimento:
Congelate le fragole tagliate a pezzetti (solo 125 gr, non tutte le fragole, tenete il resto nel frigo) ed i mirtilli per almeno 2 ore.
Ammollate le mandorle per almeno 2 ore.
Ora iniziamo a creare la nostra torta!
Per Β il primo strato:
Mettete i datteri e le mandorle nel mixer e frullate finchΓ© non ottenete un composto appiccicoso. Disponetelo livellando nella tortiera (io ho rivestito la mia con carta da forno):
Ora mettetelo nel freezer.
Per il secondo strato:
Mettete le fragole congelate a pezzetti nel mixer, versate 5 cucchiai di latte e frullate fino ad ottenere una consistenza “da gelato”. Spalmatela livellando sul primo strato della torta:
Rimettete la torta in freezer e lasciatecela finchΓ© non Γ¨ congelata.
Per il terzo strato:
Mettete i mirtilli congelati nel mixer con 1 cucchiaio di latte ed 1 cucchiaio di farina di cocco e frullate. Usate il composto per creare il terzo strato:
Rimettete la torta in freezer e lasciatecela finchΓ© completamente congelata.
Per la copertura:
Tagliate a pezzetti il resto (55 gr) delle fragole e spruzzatele con succo di limone. Usatele per decorare la superficie della vostra torta.
