You already know I just got my amazing new dehydrator, and I’m so excited about that!!
A few days ago I created these mini raw burgers and I’ve loved them, so I’m happy to share with you my recipe.
I had an entire romanesco broccoli, so I used a part of it to make burgers, and the rest of it to make a delicious raw pesto to garnish my burgers (you can also use it to garnish salads, raw vegetable spaghetti, piadina, or anything else you like…).
I hope you’ll like it as I did!
If you don’t have a dehydrator you can also use your oven to 40° for about 5 hours (as I did to make my Sprouts & Seeds Raw Burgers some time ago: https://valevegglutenfree.wordpress.com/2015/01/07/sprouts-seeds-raw-burgers-burgers-crudisti-di-semi-e-germogli/ ).
I also used some almond okara, but if you don’t have it, you can just use grounded almonds instead.
Ingredients for the burgers (about 15 mini burgers):
270 gr cleaned romanesco broccoli (just florets and the core of the stem)
50 gr pine nuts
60 gr cashew nuts
50 gr sunflower seeds
60 gr almond okara
70 gr semi dried cherry tomatoes
40 gr olives
1 chopped garlic clove
1 tsp turmeric powder
1 tsp cumin powder
Ingredients for the raw pesto:
280 gr cleaned romanesco broccoli (just florets and the core of the stem)
100 gr pine nuts
2 chopped garlic cloves
10 tbsp extra virgin olive oil
2 tbsp umeboshi vinegar (to salt)
4 tbsp lemon juice
Method for the burgers:
It’s really easy!! The only thing you should remember is to soak cashew nuts and sunflower seeds for about 4/6 hours (I forgot them and soaked them for almost 20 hours, but 4 or 6 hours is enough!)
Now all you need is a food processor to blend together all the ingredients, then roll the paste in between your hands into little balls and then press them to shape your mini burgers.

Dehydrate them for about 15 hours setting the raw program (maximum temperature = 42°).
Method for the raw pesto:
Again, it’s very easy and fast! Put all the ingredients in the food processor and blend, just pour the oil gradually to get the consistency you like.

Sapete già che ho preso da poco il mio nuovo favoloso essiccatore, e ne sono così entusiasta!!
Pochi giorni fa ho creato questi mini burgers crudisti e li ho adorati, quindi sono felice di condividere con voi la mia ricetta.
Avevo un intero broccolo romanesco, quindi ne ho usato una parte per fare i burgers, ed il resto per fare un delizioso pesto crudista con cui guarnire i miei burgers (potete anche usarlo per guarnire insalate, spaghetti crudisti di verdure, piadine, o qualsiasi altra cosa vi piaccia…).

Se non avete un essiccatore potete anche usare il forno a 40° per circa 5 ore (come ho fatto io per i miei Burgers crudisti di semi e germogli poco tempo fa: https://valevegglutenfree.wordpress.com/2015/01/07/sprouts-seeds-raw-burgers-burgers-crudisti-di-semi-e-germogli/ ).
Io ho usato anche dell’okara di mandorle, ma se non ne avete, potete semplicemente usare invece delle mandorle macinate.
Ingredienti per i burgers (circa 15 mini burgers):
270 gr broccolo romanesco pulito (solo le cimette ed il cuore del gambo)
50 gr pinoli
60 gr anacardi
50 gr semi di girasole
60 gr okara di mandorle
70 gr pomodori ciliegini semi secchi
40 gr olive (io ho usato le taggiasche)
1 spicchio d’aglio tritato
1 cucchiaino curcuma in polvere
1 cucchiaino cumino in polvere
Ingredienti per il pesto crudista:
280 gr broccolo romanesco (solo cimette e cuore del gambo)
100 gr pinoli
2 spicchi d’aglio tritati
10 cucchiai olio evo
2 cucchiai acidulato di umeboshi (per salare)
4 cucchiai succo di limone
Procedimento per i burgers:
E’ davvero facile!! L’unica cosa che dovete ricordare è di ammollare anacardi e semi di girasole per circa 4/6 ore (io me li sono dimenticati e li ho ammollati per quasi 20 ore, ma 4 o 6 ore è sufficiente!)
Ora tutto ciò di cui avete bisogno è un mixer per frullare insieme tutti gli ingredienti, poi con le mani formate delle palline di impasto e premetele per formare i vostri mini burgers.

Essiccateli per circa 15 ore impostando il programma crudista (massima temperatura = 42°).
Procedimento per il pesto crudista:
Di nuovo, è davvero facile e veloce! Mettete tutti gli ingredienti nel mixer e frullate, solo versate l’olio gradualmente per raggiungere la consistenza che preferite.
