Hi everybody!
I know…you’re asking: “What’s the RIGHT name of this recipe?? Is the title a mistake??” 😀 …No, it’s not a mis-spell, it’s a wordplay between chickpeas and pumpkin, the main ingredients in this recipe 😉
This is a course I made and I loved, so I like to share it with you. I served it with white thai rice, it’s an amazing single course, I hope you’ll appreciate it as much as I did!
Ingredients:
200 gr dry chickpeas (400 gr boiled chickpeas)
400 gr clean pumpkin
1 red onion (about 100 gr)
1 clove of garlic
500 ml tomato pulp
1 tsp of turmeric
2 tsps of curry
1 tsp of hot paprika
1 tsp dried hot pepper
1 tsp of grated fresh ginger
Salt
Extra virgin olive oil
Thai rice
Method:
After at least 12 hours of soaking in water, boil the chickpeas (put a little piece – about 3 cm – of kombu alga in the cooking water to make them easy to digest. They will take about 3 hours starting by the boil, low flame. Put salt in only at the end.)
Cut up the pumpkin into small pieces.
Boil apart the thai rice (in a small amount of water, it has to be absorbed by the rice. Salt only when it’s cooked.)
Sauté in a pan with olive oil the sliced onion and the minced clove of garlic.
Spice with curry, paprika and hot pepper (we’ll add turmeric and ginger at the end, not to loose their curing properties) and quickly toast the spices, then add the pumpkin and sauté everything for about 5′.
Add your chickpeas and the tomato pulp.
Lower the heat, keep the lid on and let it cook for about 25/30′. 5′ before the end of cooking, add turmeric and ginger, and season to taste.
Serve the Curried ChickpePumpkin with white thai rice, pouring a drizzle of cold oil.

Lo so…vi state chiedendo: “Qual è il nome CORRETTO di questa ricetta?? Il titolo è un errore??” 😀 …No, non è uno sbaglio, è un gioco di parole tra ceci e zucca, i principali ingredienti di questa ricetta 😉
Questo è un piatto che ho fatto ed adorato, quindi ho voglia di condividerlo con voi. L’ho servito con riso bianco thai, è uno straordinario piatto unico, spero lo apprezzerete quanto me!
Ingredienti:
200 gr ceci secchi (400 gr lessati)
400 gr zucca pulita
1 cipolla rossa (circa 100gr)
1 spicchio d’aglio
500 ml polpa di pomodoro
1 cucchiaino curcuma
2 cucchiaini curry
1 cucchiaino paprika piccante
1 cucchiaino peperoncino secco
1 cucchiaino zenzero fresco grattugiato
Sale
Olio evo
Riso thai
Procedimento:
Dopo almeno 12 ore di ammollo, lessare i ceci (con un pezzetto di alga kombu durante la cottura. Circa 3 ore scarse dall’ebollizione, a fiamma moderata. Salare solo a fine cottura.).
Tagliare la zucca a cubetti piccoli.
Cuocere a parte il riso thai (in poca acqua, che venga assorbita. Salare solo a fine cottura).
Soffriggere in padella con olio evo la cipolla a rondelle e l’aglio tritato.
Aggiungere le spezie (tutte tranne curcuma e zenzero che aggiungeremo a fine cottura per non perderne le proprietà ) e far tostare rapidamente, poi aggiungere la zucca e rosolare circa 5’.
Aggiungere i ceci e la polpa di pomodoro.
Abbassare la fiamma e lasciar cuocere con coperchio circa 25/30’. Verso fine cottura (quando mancano circa 5’) aggiungere la curcuma e lo zenzero, e correggere di sale.
Servire la Ceciucca al curry insieme al riso Thai, eventualmente completare con un filo d’olio a crudo.
