Hope you’ve spent a great Christmas and you started well the new year!
This year I’ll post also some recipes made using the Thermomix processor, hope you’ll be happy about that. I’m glad I got one, and just starting to create something by that!
This is as usual a gluten free recipe, I used black kale because I really love it, hope you too!
Ingredients:
500 gr clean pumpkin (I got a lot from my neighbour, then I cleaned, dice and frozen it – so my pumpkin was defrosted)
1 big red onion
220 gr clean and shredded black kale
30 gr extra virgin olive oil
Tamari sauce to season
150 gr edamame beans (I buy them frozen, then I cook them in a pan for a few minutes)
Semi-brown rice (about 70 gr – dry weight – per person)
Method:
Peel and cut the onion in 4 pieces, then put it into the TM. Chop it for 5 seconds, speed 7.
Pour the oil into the bowl, then sauté for 3 minutes, 90° C, speed 2.
Add the black kale, then cook for 2 minutes, 100°C, reverse, speed 1 (just to make room for the pumpkin).
Add the pumpkin, cook for 12 minutes, 100°, reverse, speed 1.
Remove the TM lid, pour a drizzle of Tamari sauce and cook – without the lid – for 18 minutes.
Pour the stew in a soup tureen, add the cooked edamame beans and blend.
Serve with a little tower of rice, pour a drizzle of tamari sauce and oil on it. I garnished it with edamame beans on the top.
For the rice: I always rinse it, then put it into a pot with cold water (ratio 2:1), bring to the boil and simmer until all the water is absorbed and the rice cooked. Then I cover for 10 more minutes off the flame. I don’t put salt, if you use it, do not add the tamari sauce at the end.

Quest’anno pubblicherò anche alcune ricette fatte usando il Bimby, spero ne sarete felici. Sono contenta di averne avuto uno, e sto iniziando a sperimentare!
Questa è come sempre una ricetta senza glutine, ho usato il cavolo nero perché lo adoro, spero anche voi!
Ingredienti:
500 gr zucca pulita (me ne ha regalata un sacco la mia vicina, quindi l’ho pulita, fatta a cubetti e surgelata – quindi la mia zucca era decongelata)
1 cipolla rossa grande
220 gr cavolo nero pulito e tagliato a pezzetti
30 gr olio evo
Salsa tamari a piacere
150 gr edamame (li compro surgelati, poi li cuocio in padella per pochi minuti)
Riso semi-integrale Carnaroli (circa 70 gr – peso secco – a persona)
Procedimento:
Pelate e tagliate in 4 la cipolla, poi inseritela nel Bimby. Tritate per 5 secondi, velocità 7.
Versate l’olio nella caraffa, poi rosolate per 3 minuti, 90°C, velocità 2.
Aggiungete il cavolo nero, poi cuocete per 2 minuti, 100°C, antiorario, velocità 1 (giusto per ridurne il volume e far spazio alla zucca).
Aggiungete la zucca, cuocete per 12 minuti, 100°C, antiorario, velocità 1.
Togliete il misurino, versate un filo di salsa tamari e cuocete – senza misurino – per 18 minuti.
Trasferite lo stufati in una zuppiera, aggiungete gli edamame e mescolate.
Servite con una torretta di riso, versatevi sopra un filo di olio e salsa tamari. Io l’ho guarnita con degli edamame.
Per il riso: io lo sciacquo sempre, poi lo metto in pentola con acqua fredda (rapporto 2:1), porto a bollore e faccio sobbollire finché non ha assorbito tutta l’acqua ed il riso è pronto. Poi lo copro per 10 minuti fuori fiamma. Non metto sale, se ne mettete non aggiungete poi alla fine la tamari.
