How’re you?? Long time…sorry about that, but I’m super busy staying out of the house lol: after work I usually go to run or to swim or to walk so…less time for cooking but overall less time for my blog! I’m sorry about that, hope I’ll find more free time to write my recipes 😉
Here’s a delicious pumpkin pie, I promise! My sweet neighbor has a vegetable garden and she gave me some amazing fresh pumpkin…
I also put some pepper (fresh habanero pepper) in it, but obviously you can avoid it if you don’t like spicy flavors. I think it tastes good with the sweet pumpkin. 🙂
I used my Thermomix, so here’s the recipe!
Ingredients:
1 red onion
1/2 habanero pepper
20 gr extra virgin olive oil
500 gr diced pumpkin
1 tbsp stock powder
200 gr vegan ricotta (it’s a kind of italian cheese)
Nutmeg
Ground dried oregano, thyme and rosemary
Gluten free vegan puff pastry (or you can use my “gluten free crazy pastry” – version 1 or 2 – you can find here on my blog)
Method:
Put the onion and habanero pepper in the Thermomix. Speed 7, 5 seconds.
Pour the oil into the bowl, sauté for 3 minutes, 100° C, speed 1.
Add the pumpkin, cook to 100° C for 5 minutes, speed 3.
Put the stock powder in the bowl, cook (with a bit of water if needed) to 100°C for 30 minutes, speed 2.
Add vegan ricotta, nutmeg and herbs then cook to 100°C for 5 minutes, speed 4.
This is the vegan ricotta I used:
Thiken the mixture (if needed, I did it) cooking for about 7 minutes, Varoma, just blending.
Use the mixture to fill the puff pastry, then bake to 200°C for about 30 minutes.

Tanto tempo…mi dispiace, ma sono super impegnata nello star fuori casa ahaha: dopo il lavoro di solito vado a correre o nuotare o camminare quindi…meno tempo per cucinare ma soprattutto meno tempo per il mio blog! Me ne dispiace, spero di ritrovare un pò più di tempo per scrivere le mie ricette 😉
Eccovi una torta di zucca deliziosa, giuro! La mia dolcissima vicina ha un orto e mi ha regalato della zucca freschissima e deliziosa…
Io ci ho messo anche del peperoncino (habanero fresco), ma ovviamente potete ometterlo se non amate il piccante. A mio gusto sta bene col dolce della zucca. 🙂
Io ho usato il Bimby, quindi eccovi la ricetta!
Ingredienti:
1 cipolla rossa
1/2 habanero fresco
20 gr olio evo
500 gr zucca tagliata a dadini
1 cucchiaio dado vegetale (uso il Rapunzel senza glutine)
200 gr ricotta vegan
Noce moscata
Trito secco di origano, timo, rosmarino
Pasta sfoglia vegan senza glutine (finora ho trovato solo Buitoni – oppure potete usare la mia pasta matta versione 1 o 2 che trovate qui nel blog)
Procedimento:
Mettete cipolla ed habanero nel Bimby. Velocità 7, 5 secondi.
Versate l’olio nel boccale, saltate per 3 minuti, 100°, velocità 1.
Aggiungete la zucca, cuocete a 100° per 5 minuti, vel 3.
Mettete il dado nel boccale, cuocete (eventualmente con un filo d’acqua) a 100° per 30 minuti, vel 2.
Aggiungete la ricotta vegan, la noce moscata e gli aromi poi cuocete a 100° per 5 minuti, vel 4.
Questa è la ricotta che ho usato:
Addensate (se necessario, io l’ho fatto) il composto cuocendo a Varoma per circa 7 minuti, con mescolamento.
Usate il composto per farcire la pasta sfoglia, poi cuocete a 200°C per circa 30 minuti.
