I felt in love with the colours of this soup, they made me feel I was walking in a forest, by cabbage’s dark-green colour, pumpkin’s orange colour and red/brown colour of adzuki beans…this feeling inspired the name, thinking about the green colour of foliage, the red/brown colour of barks, the orange colour of…I don’t know but it goes together lol 😀
I’ve loved this soup, very tasty! This time, upon my mum’s advice (mums know it long!!) I added herbs at the end (usually I add them at the beginning to season vegetables), and indeed I noticed the final flavour got enriched! Well done mummy!
I always add turmeric and ginger at the end (during the 5 last minutes), it’s important to preserve their properties!
Here we go with the recipe!
Ingredients:
100 gr adzuki beans (dry weight)
420 gr black cabbage
455 gr cleaned pumpkin
465 gr potatoes (unpeeled weight)
335 gr leeks
1 carrot (130 gr)
1 garlic clove
1,5 lt vegetable broth
1 tbsp dried thyme
1 tbsp mixed dried sage and rosemary
1 tbsp dried oregano
Dried Cayenne pepper to taste
1 tsp turmeric powder 1 tsp
1 piece fresh ginger (3 cm)
1 piece Kombu alga (3 cm, to cook beans)
1 bay leaf (to cook beans)
Extra virgin olive oil
Method:
Cook separately the adzuki beans as instructions on the package say (in my case, after soaking for at least 12 hours, boil in cold water, 600 ml for 100 gr, on a low flame, keeping the lid on, for 90′ after boiling. Do not salt). Put in the pot with beans the kombu alga and the bay leaf (cut in halves) during cooking, then throw them away.
Heat the oil in capacious pot, add chopped leeks, garlic and carrots, and styr-fry until they soften.
Add cubed potatoes and pumpkin, sprinkle Cayenne pepper on it and stir-fry for some more minutes.
Put shredded cabbage in the pot, pour the vegetable broth, keep the lid on, lower the flame and cook for about 30′.
5′ before the soup is cooked add grated or thinly minced ginger, the herbs and turmeric powder. Season to taste (I didn’t add salt).
Now use your hand blender, I preferred to coarsely blend it because I thought it was nice to leave some whole bits of pumpkin, but if you prefer you can make this soup creamy.
Add now the boiled beans and blend with a wooden spoon.
Serve with a drizzle of cold oil on it.

Mi sono innamorata dei colori di questa zuppa, mi hanno dato l’idea di passeggiare in un bosco, col verde scuro del cavolo, l’arancione della zucca ed il rosso/marrone dei fagioli azuki…è stata questa sensazione che mi ha ispirato il nome, col verde delle fronde, il rosso/marrone delle cortecce e l’arancione…nonlo so ma ci sta benissimo ahahah!!!
Ho adorato questa zuppa, gustosissima! Questa volta, su consiglio della mamma (eh, quante ne sanno le mamme!!) ho aggiunto gli aromi essiccati verso fine cottura (normalmente li aggiungevo al soffritto per insaporirlo), ed effettivamente ho notato che il sapore finale ne viene arricchito! Brava mamma!
Curcuma e zenzero li aggiungo sempre a fine cottura, è importante per mantenerne le proprietà!
Eccovi la ricetta!
Ingredienti:
100 gr fagioli azuki (peso secco)
420 gr cavolo nero
455 gr zucca (pulita)
465 gr patate (pesate non pelate)
335 gr porri
1 carota (130 gr)
1 spicchio d’aglio
Brodo vegetale 1,5 lt
Timo secco 1 cucchiaio
Trito salvia e rosmarino secchi 1 cucchiaio
Origano secco 1 cucchiaio
Peperoncino secco a piacere
Curcuma in polvere 1 cucchiaino
Zenzero 1 pezzetto (3 cm)
Alga Kombu 1 pezzo (3 cm, per cuocere i fagioli)
Alloro 1 foglia (per cuocere i fagioli)
Olio evo
Procedimento:
Cuocere a parte i fagioli azuki come da istruzioni sulla confezione (nel mio caso, dopo un ammollo di almeno 12 ore, cuocere in acqua fredda, 600 ml per 100 gr, a fiamma bassa con coperchio per 90’ dall’ebollizione. Non salare). Mettere nella pentola con i fagioli l’alga kombu e la foglia di alloro spezzata a metà per tutta la durata della cottura, poi eliminarle.
In una pentola capiente, scaldare un po’ d’olio e poi soffriggere i porri, l’aglio e le carote (tutto triturato) finchè non si ammorbidiscono.
Aggiungere le patate e la zucca a cubetti, spolverare con peperoncino e far rosolare qualche minuto.
Unire le foglie di cavolo tagliate a pezzetti, versare il brodo, coprire, abbassare la fiamma e far cuocere per circa 30’.
Quando mancano 5’ a fine cottura aggiungere lo zenzero (grattugiato o tritato), gli aromi e la curcuma. Correggere eventualmente di sale (io non ne ho dovuto aggiungere).
Utilizzare il frullatore ad immersione, io ho preferito frullare grossolanamente perché mi piaceva lasciare qualche pezzo di zucca intero, ma se preferite potete rendere la zuppa una vellutata.
Aggiungere ora i fagioli precedentemente lessati e mescolare.
Servire con un filo d’olio a crudo.
