Some day ago I used a cauliflower and a romanesco broccoli to make a pie, so I had the leaves left, and I wanted to use them.
I also decided to use the celery leaves, some fennel leaves (with the hard parts of it too) and some savoy cabbage I had left (1/4 of it).
So…I really don’t like to throw away food, and in this case the best way to use it is making a soup!!
I think it’s delicious, and I’m happy now my fridge is empty lol 😀
The day after I had this soup with tofu on it:
Just dice 60 gr of tofu, heat some oil in a pan and add the tofu, a drizzle of tomato pulp, 1 tsp of Garam Masala (an indian mixture of herbs and spices) and a sprinkle of dried and ground sage, rosemary and oregano.
Put it on the soup and pour 1 tsp of hemp oil.
So you’ll fulfill the requirement of protein (tofu) and omega 3 (hemp oil).
Ingredients:
1 celery stalk
100 gr leek
1 carrot
1 garlic clove
Leaves of 1 cauliflower
Leaves of 1 romanesco broccoli
Leaves of 1/2 celery
1/4 savoy cabbage
Hard parts and leaves of 1 fennel
1 lt vegetable stock (+ more as needed)
1 tsp turmeric powder
3 pinches of dried mixture of sage, rosemary and oregano
Cayenne pepper to taste
Extra virgin olive oil
Sea salt as needed
Method:
Heat some oil in a pot, then add chopped celery stalk, leek, carrot and garlic. Stir-fry until they soften.
Add the cauliflower leaves, the romanesco broccoli leaves, the celery leaves, the savoy cabbage and the fennel and stir-fry again for a few minutes.
Pour the vegetable broth, keep the lid on, lower the flame and cook for about 60′. Just blend from time to time and check if you need to add some more broth.
After about 60′, add the turmeric powder, the mixture of herbs and the Cayenne pepper. Check if you need to add some sea salt. Blend and cook for 5′ more.
Now you can use your hand blender to make the soup creamy.
Serve with a drizzle of oil on it! 🙂

Qualche giorno fa ho usato un cavolfiore ed un broccolo romanesco per fare uno sformato, quindi mi erano rimaste le foglie, e volevo usarle.
Ho anche deciso di usare le foglie di sedano, qualche ciuffo di finocchio (con anche le parti dure) e del cavolo verza che mi era avanzato (1/4 di verza).
Così…davvero non mi piace buttare via il cibo, ed in questo caso il modo migliore per usarlo è fare una zuppa!!
Penso sia deliziosa, e sono felice che ora il mio frigo è vuoto ahahah 😀
Il giorno dopo ho mangiato questa zuppa con il tofu:
Semplicemente fate a cubetti 60 gr di tofu, scaldate un pò d’olio in padella ed aggiungete il tofu, una spruzzata di polpa di pomodoro, 1 cucchiaino di Garam Masala (un mix indiano di erbe e spezie) ed una spolverata di salvia, rosmarino e origano secchi e tritati.
Disponetelo sopra la zuppa e versate 1 cucchiaino di olio di canapa.
Così avrete soddisfatto il fabbisogno di proteine (tofu) e di omega 3 (olio di canapa).
Ingredienti:
1 gambo di sedano
100 gr porro
1 carota
1 spicchio d’aglio
Foglie di 1 cavolfiore
Foglie di 1 broccolo romanesco
Foglie di 1/2 sedano
1/4 cavolo verza
Parti dure e foglie di 1 finocchio
1 lt brodo vegetale (+ altro secondo necessità )
1 cucchiaino curcuma in polvere
3 pizzichi di misto secco di salvia, rosmarino ed origano
Peperoncino a piacere
Olio evo
Sale al bisogno
Procedimento:
Scaldate un pò d’olio in una pentola, poi aggiungete il gambo di sedano, il porro, la carota e l’aglio tritati. Soffriggete finchè non si ammorbidiscono.
Aggiungete le foglie di cavolfiore, di broccolo romanesco e di sedano, la verza ed il finocchio e rosolate ancora per qualche minuto.
Versate il brodo vegetale, coprite, abbassate la fiamma e cuocete per circa 60′. Semplicemente mescolate di tanto in tanto e controllate se serve aggiungere altro brodo.
Dopo circa 60′, aggiungete la curcuma, il mix di erbe ed il peperoncino. Controllate se serve aggiungere del sale. Mescolate e cuocete per altri 5′.
Ora potete usare il frullatore ad immersione per rendere la zuppa cremosa.
Servite con un filo d’olio! 🙂
