Pumpkin and mushrooms pie / Sformato alla zucca e funghi

Today I wanna share with you a pumpkin recipe!!!

I enjoyed it a lot, I hope you’ll like it as much as I did! 😋

Ingredients (4 servings):

80 gr dried mushrooms

500 gr pumpkin

620 gr potatoes

1 big red spring onion (185 gr)

1 big garlic clove

Black pepper

Fresh parsley

Extra virgin olive oil

Umeboshi vinegar

Corn breading

Poppy seeds

Method:

Soak the mushrooms for 1 hour, then rinse them well.

Clean, wash, peel and dice the pumpkin. Steam it with the peeled and cubed potatoes.

Heat some oil in a pan, then add the chopped onion and garlic and stir-fry.

Add the pumpkin and potatoes into the pan, pour some oil and umeboshi vinegar (to season), sprinkle some black pepper and fresh parsley and sauté.

Mash everything with a fork and cook for about 10′, stirring.

Put the mixture in an oiled oven pan, spread it out evenly and sprinkle some corn breading and poppy seeds on the top.

Pour a drizzle of oil and cook in preheated oven to 190* for about 30′ + 3′ with grill function.

Let it cool down before serving.

Oggi voglio condividere con voi una ricetta con la zucca!!!

A me è piaciuta un sacco, spero vi piaccia quanto a me! 😋

Ingredienti (4 porzioni):

80 gr funghi secchi

500 gr zucca

620 gr patate

1 cipollotto rosso grande (185 gr)

1 spicchio d’aglio grande

Pepe nero

Prezzemolo fresco

Olio evo

Acidulato di umeboshi

Panatura di mais

Semi di papavero

Procedimento:

Ammollate i funghi per 1 ora, poi risciacquate bene.

Lavate, pulite, pelate e fate a cubetti la zucca. Cuocetela a vapore con le patate pelate e fatte a dadini.

Scaldate un po’ d’olio in padella, poi aggiungete cipolla ed aglio tritati e soffriggete.

Aggiungete zucca e patate in padella, versate un po’ d’olio ed acidulato (per salare), spolverate con pepe nero e prezzemolo fresco e saltate tutto.

Schiacciate il tutto con una forchetta e cuocete per circa 10′, amalgamando.

Mettete il composto in una pirofila unta, livellate bene e spolverate con panatura di mais e semi di papavero.

Versate un filo d’olio e cuocete in forno preriscaldato a 190* per circa 30′ + 3′ di funzione grill.

Lasciate intiepidire prima di servire.
