Colorful Swiss chard / Bietole colorate

Hello everyone!

This is an idea for a side dish, even if I had a big big serving lol 😋

Ingredients:

Swiss chard

Daikon

Semi-dried cherry tomatoes

Green olives

Basil Veganella (a vegan cheese made from cashew nuts)

Umeboshi vinegar

Extra virgin olive oil

Lemon juice

Method:

Wash, clean, shred and steam the Swiss chard.

Heat some oil in a pan then add the Swiss chard with some peeled and diced daikon, some cubed Veganella, semi-dried cherry tomatoes and halved green olives.

Pour a drizzle of umeboshi vinegar (to season) and sauté.

Just at the end squeeze some lemon juice on the Swiss chard and serve!

Questa è un’idea per un contorno, anche se io ne ho fatto una mega porzione ahah 😋

Ingredienti:

Bietole

Daikon

Pomodori ciliegini semi-secchi

Olive verdi

Veganella al basilico (formaggio vegan a base di anacardi)

Acidulato di umeboshi

Olio evo

Succo di limone

Procedimento:

Lavate, pulite, tagliate e cuocete a vapore le bietole.

Scaldate un po’ d’olio in padella poi aggiungete le bietole con del daikon pelato e fatto a cubetti, un po’ di Veganella a dadini, pomodorini semi-secchi ed olive verdi tagliate a metà.

Versate un filo di acidulato di umeboshi (per salare) e saltate.

Solo alla fine spremete un po’ di succo di limone sulle bietole e servite.
