What about a delicious gluten free vegan cake today? Here it is! 😉
As always, it’s a gluten, oil, sugar and yeast free recipe!
Ingredients (for a 24 cm cake mold):
130 gr brown rice flour
80 gr buckwheat
50 gr desiccated coconut + extra amount for the topping
50 gr tapioca starch
300 gr dried figs
400 ml coconut milk for dessert (1 can)
100 ml maple syrup
2 tsp baking soda
6 tsp lemon juice
Method:
Sift the flour, the starch and the baking soda into a bowl, then add the desiccated coconut and blend.
Cut the figs into 4 pieces, then soak them for 10 minutes.
Add the figs into the bowl and blend.
Pour milk (shake the can before opening it) and syrup and blend again.
Preheat the oven to 180* C and just when it’s ready, pour the lemon juice and quickly blend (it’s supposed to react with the baking soda into the oven to replace the yeast).
Pour the mixture into the mold (line it with parchment paper) and bake for about 35 minutes, then turn off the oven and let the cake inside to cool down.
Brush the top of the cake with a drizzle of water, then sprinkle some desiccated coconut on it.

Che ne dite di una deliziosa torta vegan senza glutine oggi? Eccola! 😉
Come al solito è una ricetta senza glutine, olio, zucchero e lievito!
Ingredienti (per una tortiera da 24 cm):
130 gr farina di riso integrale
80 gr farina di grano saraceno
50 gr cocco essiccato + quantità extra per la copertura
50 gr amido di tapioca
300 gr fichi secchi
400 ml latte di cocco per dolci (1 lattina)
100 ml sciroppo d’acero
2 cucchiaini bicarbonato
6 cucchiaini succo di limone
Procedimento:
Setacciate le farine, l’amido ed il bicarbonato in una terrina, poi aggiungete il cocco essiccato e mescolate.
Tagliate i fichi in 4 pezzi, poi ammollateli per 10′.
Aggiungete i fichi nella terrina e mescolate.
Versate latte (agitate la lattina prima di aprirla) e sciroppo e mescolate ancora.
Preriscaldate il forno a 180* e solo quando è pronto, versate il succo di limone e mescolate velocemente (deve reagire in forno col bicarbonato per sostituire il lievito).
Versate il composto nella tortiera (rivestita con carta forno) e cuocete per circa 35′, poi spegnete il forno e lasciate la torta dentro a raffreddare.
Spennellate la torta con un filo d’acqua, poi spolverate con cocco in scaglie.
