I’ve been so lonely these past 3 days: problems with Internet, and I felt like I was locked out from the world! I’m so happy now to be back!!
I wanna share with you a recipe for a delicious vegetable soup.
I called it “Dinosaur Soup” because I just found out that some people, in english, call black leaf kale also dinosaur kale, and I love this name!!! I also think that calling like that a vegetable soup, is a brilliant way to make children eat and love vegetables, don’t you think so? 😀
Ingredients:
Leeks 370 gr
Carrots 150 gr
Pumpkin 150 gr
Broccoli 800 gr
Black leaf kale (dino kale) 500 gr
Vegetable broth 1,5 lt
Garlic 1 clove
Extra virgin olive oil
Turmeric 1 tsp
Sage (a fistful of leaves)
Rosemary (a sprig)
Oregano
Dried hot pepper
Method:
In a capacious pot, sauté leeks (thinly sliced), minced garlic and carrots (thinly sliced) with olive oil.
Add the ground spices (rosemary, sage, oregano and hot pepper), let it develop a richer flavour, blending with a wooden spoon for a few minutes.
Add your chopped pumpkin, let it become tasty, then put broccoli’s stem (you should remove the hard surface and cut into little pieces the core of the stem) and let it brown.
Add the broccoli florets (in bits), let them brown and then pour 1 lt of vegetable broth, keep the lid on and let it cook over a low flame for about 20′.
Add now the black leaf kale cut into strips and broccoli’s leaves, pour 500 ml more of vegetable broth, keep the lid and cook for about 40′ more.
Sprinkle turmeric on your soup and let it cook for 10′ more.
Let it cool, then you can use the blender to make creamy your soup. Serve the soup with a drizzle of cold olive oil over it.

Voglio condividere con voi una ricetta per una deliziosa zuppa di verdure.
L’ho chiamata “Zuppa del Dinosauro” perchè ho appena scoperto che molte persone, in inglese, chiamano il cavolo nero anche cavolo del dinosauro, e mi sono innamorata di questo nome!!! Penso anche che chiamare così una zuppa di verdure sia un modo geniale per far mangiare ed amare le verdure ai bambini, non credete? 😀
Ingredienti:
Porri 370 gr
Carote 150 gr
Zucca 150 gr
Broccoli 800 gr
Cavolo nero 500 gr
Brodo vegetale 1,5 lt
Aglio 1 spicchio
Olio EVO
Curcuma 1 cucchiaino
Salvia (una manciata di foglie)
Rosmarino (un rametto)
Origano
Peperoncino
Procedimento:
In una pentola capiente, soffriggere in olio evo i porri tagliati a rondelle sottili, l’aglio tritato e le carote a rondelle sottili.
Aggiungere il trito di rosmarino, salvia, origano e peperoncino, lasciar insaporire mescolando qualche minuto.
Aggiungere la zucca a cubetti, lasciar insaporire qualche minuto, poi aggiungere il gambo dei broccoli (pulito della scorza esterna più dura) a cubetti e far rosolare.
Aggiungere le teste dei broccoli tagliate a pezzi, far rosolare un paio di minuti poi versare 1 lt di brodo vegetale, coprire e far cuocere a fiamma bassa circa 20’.
Aggiungere ora il cavolo nero tagliato a striscioline e le foglie dei broccoli, versare altri 500 ml di brodo vegetale, coprire e lasciar cuocere altri 40’.
Aggiungere la curcuma e far cuocere altri 10’.
Lasciar intiepidire, poi frullare ed impiattare con un filo d’olio a crudo.
