Hello everybody!
Yesterday night I had a nice cauliflower waiting to be cooked and a small serving of boiled buckwheat, I was thinking to add some potatoes and make some béchamel to cook everything au gratin, but then…I let my imagination run wild and this is what I got!
Ingredients (for 6 portions):
1 cauliflower (the florets)
Potatoes 300 gr
Buckwheat 50 gr
Olives
Corn breadcrumbs (toasted corn flour, there is no bread at all!)
Gomashio (a dry condiment made from unhulled sesame seeds and salt) with dried algae
Extra virgin olive oil
For the sauce:
Clean pumpkin 300 gr
Tomato pulp 9 tbsp
Tahini (sesame seed paste) 3 tbsp
Extra virgin olive oil 2 tbsp
Turmeric 1/2 tsp
Dried hot pepper as much as you like
Method:
Steam your potatoes (in slices), pumpkin (in little pieces) and cauliflower (cut the floret in pieces).
Separately boil the buckwheat (one part of it in two parts of water, keep the lid on, bring to a boil and cook for 18′, it will absorb all the water. Do not salt it).
In a oiled oven pan, make the first layer of potatoes, then sprinkle it with the buckwheat.
Using the cauliflower make the second layer and scatter a handful of olives all over it.
Let’s make the sauce:
Mash up the pumpkin with a fork, add the other ingredients and mix well (you can use a mixer if you prefer).
Pour the sauce on the cauliflower, spreading it all over.
Sprinkle gomashio with algae and corn breadcrumbs on it. Pour a drizzle of oil.
Bake in preheated oven at 180° for 10′ + 10′ with grill function to cook au gratin.

P.S.: I did not use salt, I can guarantee that, thanks to gomashio, tahini, olives and spices, you will not miss it!

Ieri sera avevo un bel cavolfiore da fare ed una mini porzione di grano saraceno cotto, avevo pensato di unirli a delle patate e fare della besciamella per gratinare tutto in forno, ma poi…ho dato spazio alla fantasia ed è uscito questo!
Ingredienti (6 porzioni):
1 cavolfiore (cime)
300 gr patate
50 gr grano saraceno
Olive taggiasche
Panatura di mais
Gomasio con alghe
Olio evo
Per la salsa:
300 gr zucca pulita
Polpa di pomodoro 9 cucchiai colmi
Tahina 3 cucchiai
Olio evo 2 cucchiai
Curcuma ½ cucchiaino
Peperoncino a piacere
Procedimento:
Cuocere a vapore patate (a fette), zucca (a cubetti) e cavolfiore (cimette tagliate a pezzi).
Cuocere a parte il grano saraceno (in due parti d’acqua, coperchio e fiamma bassa, 18’ dall’ebollizione, assorbirà tutta l’acqua. Non salare).
In una pirofila unta disporre un primo strato di patate, poi spolverare sopra il grano saraceno.
Con il cavolfiore fare il secondo strato ed aggiungere una manciata di olive.
Preparare la salsa:
Con una forchetta schiacciare la zucca, aggiungere gli altri ingredienti e mescolare bene (se preferite usate il frullatore).
Versate la salsa sui cavolfiori, stendendola bene a coprire tutta la superficie.
Spolverare con gomasio con alghe e panatura di mais. Dare un giro d’olio.
Infornare a 180° per 10’ + 10’ di funzione grill per gratinare.

PS: Non ho usato sale, garantisco che il gomasio in superficie, la tahina, le olive e le spezie non ve ne faranno sentire la mancanza!
