Yesterday I told you I got an amazing new dehydrator…and I immediately made these almond and hazelnut okara raw pastries!!
I decided to made 2 different flavour pastries, and the colours are different too! 😉
They’re soft, you can keep them in a food container in the fridge.
Ingredients (for 14 pastries):
120 gr almond and hazelnut okara (from making my home-made milk, using 3 dates to sweeten it)
1 ripe banana (100 gr)
150 gr pitted dates (I used mazafati quality, they’re fresh, so you don’t need to soak them)
40 gr cashew nut
A few drops of lemon juice
2 tbsp coconut flour
2 tbsp carob powder
Method:
Soak the cashew nuts for about 2 hours (I forgot to do that because I was in a hurry to test my dehydrator, so don’t worry if you forget to soak, you can make these pastries anyway! 😀 ).
Put okara, dates and cashew nuts in your food processor and mix.
Mash up a banana with a fork, and pour a few drops of lemon juice on it.
Then blend banana with your mixture using a fork (or your hands, as I did!).
Halve the mix: add the carob powder to one half and the coconut flour to the other, and mix again using your hands.
Roll the paste in between your hands into little balls, then press them to shape.
Dehydrate for about 15 hours setting the raw program (maximum temperature = 42°).

Ieri vi ho detto che ho preso un fantastico essiccatore…ed ho immediatamente fatto questi pasticcini crudisti con okara di mandorle e nocciole!!
Ho deciso di fare pasticcini di 2 diversi sapori, ed anche i colori sono diversi! 😉
Sono morbidi, li potete conservare in una contenitore in frigorifero.
Ingredienti (per 14 pasticcini):
120 gr okara di mandorle e nocciole (dall’autoproduzione di latte, usando 3 datteri per dolcificarlo)
1 banana matura (100 gr)
150 gr datteri snocciolati (ho usato la qualità mazafati, sono freschi, quindi non è necessario ammollarli)
40 gr anacardi
Qualche goccia di succo di limone
2 cucchiai farina di cocco
2 cucchiai polvere di carruba
Procedimento:
Ammollate gli anacardi per circa 2 ore (io mi sono dimenticata di farlo perchè avevo fretta di testare il mio essiccatore, quindi non vi preoccupate se dimenticate l’ammollo, potete comunque fare questi pasticcini! 😀 ).
Mettete l’okara, i datteri e gli anacardi nel mixer e frullate.
Schiacciate una banana con la forchetta, e versateci qualche goccia di succo di limone.
Poi amalgamate la banana con il composto usando una forchetta (o le mani, come ho fatto io!).
Dividete a metà il composto: aggiungete la polvere di carrube ad una metà e la farina di cocco all’altra, ed amalgamate di nuovo usando le mani.
Formate delle palline tra le mani, poi schiacciatele per dare la forma.
Essiccate per circa 15 ore impostando il programma crudista (massima temperatura = 42°).
