Curried crunchy veggies / Verdure croccanti al curry

Hello everyone!

Today I wanna share with you this side dish recipe, even if I had it as single course for dinner because I always put too much stuff in the pan lol 😀

Ingredients (for 2 servings as a side dish):

1 red spring onion

1 garlic clove

1 carrot

5/6 cm of daikon radish

Spinach as much as you like

Escarole as much as you like

1 celery stalk

Extra virgin olive oil

1 tsp curry

Tamari sauce to taste

A handful of coarsely ground cashew nuts

Method:

Heat some oil in a pan, then add chopped garlic, onion, celery and carrot and stir-fry.

Now add shredded spinach and escarole, sauté for a minute then cover, lower the flame and cook until they soften.

Dice the daikon and put it into the pan with curry and tamari sauce.

Sauté again for a few minutes (I like daikon still crunchy).

Serve with a sprinkle of cashew nuts.

Ciao a tutti!

Oggi voglio condividere con voi questa ricetta per un contorno, anche se io l’ho mangiato come piatto unico per cena perchè metto sempre troppa roba in padella ahah 😀

Ingredienti (per 2 porzioni come contorno):

1 cipollotto rosso

1 spicchio d’aglio

1 carota

5/6 cm di daikon

Spinaci a piacere

Scarola a piacere

1 costa di sedano

Olio evo

1 cucchiaino curry

Salsa tamari qb

Una manciata di anacardi macinati grossolanamente

Procedimento:

Scaldate un pò d’olio in padella, poi aggiungete aglio, cipolla, sedano e carota tritati e soffriggete.

Ora aggiungete spinaci e scarola a listarelle, saltate per un minuto poi coprite, abbassate la fiamma e cuocete finché non si ammorbidiscono.

Fate il daikon a cubetti e mettetelo nella padella con curry e salsa tamari.

Saltate ancora per qualche minuto (mi piace il daikon ancora croccante).

Servite con una spolverata di anacardi.
