Hello everyone!
Here I am with a new raw pesto!
In this recipe I used also some almond okara (the leftover pulp I get by making my almond milk), but you can replace it with some ground almonds (just pour a drizzle of water when you grind them, to wet them a bit).
I used this raw pesto to dress an amazing pasta with black-eyed peas and onion (a really tasty single course!),
but if you want a completely raw meal you can obviously use the pesto to dress a salad, or to make some raw veggie canapes! 🙂

Ingredients for the pesto (about 275 gr of pesto):
100 gr almond okara
95 gr clean basil
40 gr semi-dried cherry tomatoes
4 tbsp extra virgin olive oil
1 garlic clove
20 gr taggiasche olives
About 10 capers
Ingredients for the pasta (1 serving):
90 gr corn spaghetti
35 gr red onion
67 gr boiled and unsalted black-eyed peas (dry weight 30 gr)
Extra virgin olive oil
Tamari sauce
1 tsp hemp oil (it satisfies the omega 3 daily requirement)
Method:
Soak the beans for at least 12 hours with a piece of kombu alga (3 cm) in the water. Rinse them and cook in cold unsalted water with the kombu alga and a halved bay leaf.
Bring to a boil some salted water and put the pasta in. Cook for the required time.
Make the pesto just by blending all the ingredients in the food processor.
Heat some oil in a pan, then add the chopped onion and stir-fry until it softens.
Drain the spaghetti and put them into the pan with the beans, pour a drizzle of oil and tamari sauce and sauté.
Serve the pasta with your raw pesto and a teaspoon of hemp oil!

Eccomi con un altro pesto crudista!
In questa ricetta ho usato anche dell’okara di mandorle (la polpa residua che ottengo facendo il mio latte di mandorle), ma potete sostituirla con delle mandorle macinate (solo versate un filo d’acqua quando le macinate, per inumidirle un pochino).
Ho usato questo pesto raw per condire una splendida pasta con fagioli dell’occhio e cipolla (un piatto unico davvero saporito!),
ma se volete un pasto completamente raw potete ovviamente usare il pesto per condire un’insalata, o per fare delle tartine raw di verdura! 🙂

Ingredienti per il pesto (circa 275 gr di pesto):
100 gr okara di mandorle
95 gr basilico pulito
40 gr pomodori ciliegini semi-secchi
4 cucchiai olio evo
1 spicchio d’aglio
20 gr olive taggiasche
Circa 10 capperi
Ingredienti per la pasta (1 porzione):
90 gr spaghetti di mais
35 gr cipolla rossa
76 gr fagioli dell’occhio bolliti e non salati (peso secco 30 gr)
Olio evo
Salsa tamari
1 cucchiaino olio di canapa (soddifsa il fabbisogno giornaliero di omega 3)
Procedimento:
Ammollate i fagioli per almeno 12 ore con un pezzo di alga kombu (3 cm) nell’acqua. Risciacquate e cuocete in acqua fredda non salata con la kombu ed una foglia di alloro spezzata a metà.
Portate a bollore dell’acqua salata e buttate la pasta. Cuocete per il tempo necessario.
Fate il pesto semplicemente frullando tutti gli ingredienti nel mixer.
Scaldate un pò d’olio in padella, poi aggiungete la cipolla tritata e soffriggete finché non appassisce.
Scolate gli spaghetti e metteteli in padella con i fagioli, versate un filo d’olio e di salsa tamari e saltate.
Servite la pasta con il vostro pesto raw ed un cucchiaino di olio di canapa!

Questa ricetta è SUPERGOLOSA …..il pesto crudista fantastico….bravissima Valentina e mi piace il fatto , pur avendo un pesto raw già ricchissimo, il fatto di saltare gli spaghetti con cipolla ,fagioli e tamarindo …splendido piatto unico👏👏👏👑👍👍👍
