Pumpkin and mushroom Buckwheat-otto / Granotto zucca e funghi

Hello everyone!

I love buckwheat, so I made this kind of “risotto” using buckwheat instead of rice!

I hope you’ll like it 😉

Ingredients (3/4 servings):

200 gr buckwheat

300 gr cleaned and peeled pumpkin

20 gr dried porcini mushrooms

1 lt vegetable broth

Extra virgin olive oil

1 red onion

Black pepper to taste

Method:

Soak mushrooms in lukewarm water for about 30′ to rehydrate them, then wash them well.

Chop pumkin and onion.

Heat some oil in a pan, then add onion and let it get soft and golden brown.

Add pumkin and mushrooms and stir-fry.

When the pumkin stars to soften add buckwheat, toast it a few minutes then pour some broth and cook on a low flame for about 30′ pouring broth as it gets absorbed.

Turn off the flame, pour a drizzle of oil, blend, keep the lid on and let it stand for 10′.

Serve with a sprinkle of black pepper on it.

Io amo il grano saraceno, quindi ho fatto questa specie di “risotto” usando il grano saraceno al posto del riso!

Spero vi piaccia 😉

Ingredienti (3/4 porzioni):

200 gr grano saraceno

300 gr zucca pulita

20 gr porcini secchi

1 lt brodo vegetale

Olio evo

1 cipolla di Tropea

Pepe nero

Procedimento:

Far reidratare i funghi in acqua tiepida per almeno mezz’ora, poi risciacquare bene.

Tagliare la zucca a cubetti e tritare la cipolla.

Scaldare un po’ d’olio in padella poi aggiungere la cipolla e farla ammorbidire e dorare.

Aggiungere i funghi e la zucca e far insaporire bene.

Quando la zucca inizia ad ammorbidirsi aggiungere il grano saraceno, far tostare ed insaporire qualche minuto poi coprire con parte del brodo e far cuocere a fiamma bassa circa 30’ aggiungendo il brodo man mano che viene assorbito.

Spegnere la fiamma, versare un filo d’olio, mescolare e lasciar riposare 10’ col coperchio.

Servire con una spolverata di pepe nero.
